i skipped my final theory test today because i've only read the first few pages of the advanced theory book. now i'm quite doomed, i think, and early tomorrow morning i have another driving lesson. i'm freaking out already, because my mind keeps screaming, you're controlling a massive killing machine, damnit and i keep stopping in the middle of the road after making particularly scary turns, out of panic.
today i realised i had loads of cocoa powder and dark baking chocolate on hand, and decided to make a huge batch of dark chocolate cupcake batter. the thing is, this recipe was pretty strange and called for 1.5 jars of mayonnaise instead of eggs. the result was a bizarre, dense and unfluffy muffin-like first batch of six, and i tried to salvage the remaining 90% that was left by adding 4 eggs (whisked till fluffy as hell), as well as more tempered dark chocolate and butter. i was quite annoyed at this point, so i just chucked the batter into 2 big cake pans and baked as usual.
to my surprise, the result was really good and almost brownie-like. i went ahead and topped them off with peanut buttercream frosting. the silly recipe didn't call for salt, and i assumed the mayo would make up for it, so thank goodness for creamy, salty peanut butter.
