And here's a quick tip that I employed this weekend. My husband has a love of baked goods, so although I usually try to make stuff from scratch, I bought a packaged muffin mix. I looked at the nutrition label and felt a bit dismayed at what I saw, so I decided to make some healthy substitutions. The mix came with two cans of blueberries, which were packed in a light syrup, which was full of high fructose corn syrup.....so I rinsed them clean. To make up for the sweetness lost and to add some nutrition, I added a mashed banana. I added skim milk instead of regular milk; I added eggwhites instead of eggs, and instead of oil, I added ground flax seed. Typically, for each tbsp of oil called for, you can subsitute 2 tbsps of flax seed. So, essentially, I cut calories and saturated fat, and I added protein, fiber, vitamins, and omega 3s! And the best part is, the muffins taste fantastic, and he had no idea they were healthy!
