So, I'm trying my best to get all my fruits and veggies in for the challenge, and I thought I'd share some of the stuff I've been doing that's worked out well.

-Roasted veggies- All I can say is wow. I swear, everything tastes better with roasted veggies. You name it: paninis, omlettes, sandwhiches, pasta, whatever. Oftentimes you can buy jars of roasted assorted vegetables or individual roasted veggies like eggplant, red peppers, zucchini, artichokes, or what not at your grocery store. Usually these can be found either in the Italian/ethnic section, the condiment section, or the gourmet section of your store. Anyhow, yesterday I was making my own hummus in the food processor (so easy-just add chickpeas, a squeeze or two of lemon juice, some minced garlic, water, olive oil, and salt and bleennnnd), and I added a jar of roasted eggplant in place of tahini, and it was amazing. Talk about a delicious way to get an extra serving of veggies in... This morning I was making a nice breakfast for my husband and me, and I added a minced onion and a jar of finely chopped roasted assorted veggies to our hashbrowns, and they were amazing. So good. Of course, you can always make your own roasted veggies at home. Basically, you clean up your veggies, slice them up, coat them with olive oil, salt, and pepper, and roast them in a baking dish at 425 for about 15 minutes, then turn them, and allow them to roast for another 15 minutes. If you're roasting potatoes too, they'll need to go in first for an additional 20 minutes or so. If you choose, you can even blend all of your roasted veggies and add some broth, and you can make a killer soup. Mmmmmm...

-Frozen fruit- During the summer, I eat tons of fresh berries, but during the winter, they're far too expensive, so I switch to frozen berries. Because they're frozen at their peak, they're just as nutritious as fresh berries, and they're cheaper, and they obviously never spoil! I've been making myself berry smoothies, and they're great. They're really filling because of all the protein and fiber, and they taste like a milkshake!

If anyone else has any tips for sneaking fruits and veggies in, I'd love to hear 'em!
