My top four choices:
1. The Chemistry of Chocolate - Because, well, c'mon...chocolate. And it fulfills a science w/ lab requirement that i would hate to fulfill doing hardcore physics or something.
2. Dream Interpretation from Antiquity to Freud - fulfills a history requirement while being about something I actually find really interesting.
3. Evolution and the Galapagos Islands- again, fulfills a Science w/ lab requirement AND we get to actually go to the galapagos islands.
4. Great Books: Ideas and Arguments - only because it's taught by CORNEL WEST and it fulfills an Ethical Thought and Moral Values requirement.
