Not much done yet this weekend, but I did make some good chili that we all enjoyed. It will be even better today. Matt got me a food processor for my birthday, so I can use it to make sauces and stuff. It's pretty nice. The garden was a wonderful success this year, plenty of tomatoes, and incredibly hot habenero peppers (which made a nice sauce).

Mmm.. here's how I made the chili yesterday.

Crock-pot Beer Based Chili

1 cup of pinto beans (dry)
1 medium onion diced (about 3 inches circumference)
1 beer
1 can of kidney beans, drained
1 lb ground beef. browned and drained (can substitute ground turkey)
3 large tomatoes, pureed
1 red pepper. diced
3 large tomatoes (beefsteak size)
Enough water to cook pinto beans
2 tsp Paprika
1/4 cup Chili powder
2 tsp Crushed red pepper
Salt to taste

Wash and sort pinto beans, put in crock-pot and cover beans with water, cook on high for two hours (check every so often to make sure the beans have enough water, add more as needed just to keep them covered). After two hours, add onions and beer. At 3 hours add the spices and tomato sauce. At 4 hours, add everything else then simmer on low for an additional 3 hours. Serve with shredded cheddar cheese sprinkled on top and cornbread (I use Martha White all-you-add-is-water/milk variety).
