哪些中餐被美国营养专家称为垃圾食品？ 很多人都听说过垃圾食品一词，一些人认为这是形容麦当劳、肯德基等洋快餐食品的贬义词，还有人知道是指汉堡、热狗类食品（面包夹肉肠或肉饼）。但真正了解“垃圾食品”原意的人却极少。 垃圾食品的概念最初是被用来形容汉堡、热狗类食物。因为这类食物中的肉饼、肉肠常常是用屠宰厂的“垃圾肉”制成。这类垃圾肉往往是将牛身上可以制作牛排、烤肉的组织剔出后所剩下的杂碎肉，如脖子、牛蹄附近、各种骨头上刮下来的含有肉、筋、脂肪、血管等杂碎组织。这类垃圾肉和其它屠宰废料一样，价格很便 宜。汉堡发明者将这类垃圾肉绞碎后制成烤肉饼，涂上蛋黄酱并与少量生菜叶一起夹在面包片中。这样的快餐食品不仅价格低廉，味道也很好。汉堡包是美国最负盛名的流行食品，从巨富（如比尔盖茨）、白领、到平民百姓，均是汉堡类快餐食品的忠实消费者。最初从营养角度分析认为，汉堡包能够为人们提供足够的热量和很多营养素。后来发现，这类快餐食品含有的热量有余而维生素不足，特别是衍生出的油炸肉块制成的汉堡包，含油量很大，经常食用会导致人体热量过剩和营养失衡，因此常被冠以不健康食品之名。
曾经与美国来访的食品营养专家交流，谈到美国垃圾食品的健康危害问题，美国教授却说，垃圾食品在中国饮食文化中也极为流行，比如包子、馅饼、饺子等等，与洋垃圾食品类似，也是用肉馅制成。但是，我国这类传统的肉馅食品含肉量和含油量要比汉堡包食品低的多，馅料中一般都含有很多的蔬菜，营养更加均衡。
我国肉馅类食品中的肉料质量参差不齐也是事实。有些小店制作的包子所选用的肉料质来可能比洋拉圾食品还差。有时不仅能吃出杂物，尽管有浓重的调料掩盖，仍能闻出很明显的异味。也有检查中发现极个别的经营者用含有甲状腺的血脖肉或是含有淋巴的花子肉用于制做馅料，这类包子对人的健康危害性较大。
食用未摘除甲状腺的猪、牛、羊血脖肉可引起中毒。甲状腺素非常耐热，一般的烹调方法不能消除其毒性。人误食过多的动物甲状腺，会出现头晕、头痛、胸闷、恶心、呕吐、便泌或腹泻等症状，还有人会出现局部或全身出血性丘疹，皮肤发痒，间有水泡、皮疹甚至面部浮肿、肝区痛、手指震颤、严重者发高热，心动过速等类似甲状腺机能亢进的症状。

鹅肥肝 “蜜炙”可以加工出两种 鹅肥肝：其一采用巴氏消毒的供餐厨使用的产品；其二是提高浸蜜温度和烘烤温度，加工成即食鹅肥肝。“蜜炙鹅肥肝”具有以下特点：口感更鲜嫩；加工温度不高，营养功能成分不易被破坏；有蜂蜜层保护，又经过中温灭酶，其保存 期得到延长，且能保持水分；加工过程中进行了脱腥、去苦，添加了调味料，口感和风味更佳，且可形成多种口味的鹅肥肝产品。
佐餐佳肴“香糟鹅肥肝”
糟制食品是我国的特产之一，糟鱼、糟肉、糟鸭、糟鸡、糟鹅、糟蛋等品种很多，笔者建议可以结合我国传统的糟制工艺开发“香糟鹅肥肝”。其制法是：将黄酒糟压榨后，通过轧糟机压碎，过筛；每100公斤糟加食盐3公斤、孜然0．5公斤、豆蔻0．7公斤及少量的其他天然香辛料，充分搅拌后捣烂；然后将捣成糊状的酒糟包埋经过处理的鹅肥肝，再放入造型别致的坛内，密封，待调味物质渗入肝组织内并产生宜人的香味后即为成品。亦可外购香糟（最好是陈酿香糟）来生产本品，但在糟制过程中要使用与鹅肥肝相吻合的酒精度，并使用专用调味料。
“香糟鹅肥肝”具有以下特点：糟制品可存放很久，有利于朗德鹅的鹅肥肝的贮藏、运输和销售时间的延长；成品中含有天然香料，加之有一定的酒精度，又有糟制、陈酿的过程，不但去掉了不良的气味，而且有单纯加香或简单加料酒难以产生的柔和香气；糟制本身含有发酵过程，有发酵的风味出现，而动物肝发酵属于蛋白质发酵，可望形成蛋白质发酵新型产品。“香糟鹅肥肝”具有较高的商品价值和食用价值，另有酒制食品的一些特色，是一种不可多得的佐餐佳肴。 | | 12:06 pm |
