I was thinking today about how much I love pepper. Nobody ever really thinks about pepper. In fact, unlike salt, I don't doubt that when one runs out of pepper, and doesn't really remember the next time they're at the store, that person may go without pepper forever. I love pepper. I love it in my tuna sandwiches. I love it in all my sandwiches. I especially love it when its coarse pepper, and a big chunk of it breaks away and lodges in my teeth, then I fiddle with it with my tongue until it comes free, and then I have only a large chunk of pepper to contend with, and it doesn't seem like much...only a tiny morsel, but when you are able to split it between two teeth, the flavor just comes spilling out like some magic spell, or a vein of gold in some old dirty mine shaft. The thing I love most about pepper is that you can put it into a small vessel, along with some ash, and make a hell of a blinding powder, ninja style! I mean, if you're into that kinda thing. Anyways, next time you grab that small shaker of that great gray powder, and sprinkle it atop whatever it is you put pepper on, smile and give it a little nod of appreciation because white isn't always right.
